Nothing more delicious than a homemade meal !

Marrakech-Medina offers you the possibility to appreciate Moroccan cooking at its best. Each riad has its own cook. You will discover the diversity of culinary richness. Before each meal, the scents from the kitchen will make your mouth water ! You will start your meal with a tasteful selection of dishes prepared with delicate spices and flavours, usually finely cut vegetable salads (the small courgettes will melt in your mouth).
The first dish will be followed by a tajine or another main dish like couscous. A desert, often fruit or pastry, will end the meal, accompanied by a refreshing mint tea.

The food is delicious and the portions generous.

Some traditional dishes:

Tajine : A dish slowly cooked in an earthenware pot with a conical lid. Lamb or beef tajines are prepared with seasonal vegetables, sometimes combined with prunes and almonds or figs and nuts or it can be a chicken tajine with lemon and olives. Fish tajines with vegetables and saffron are less common but absolutely divine. Slices of bread will accompany the dish to soak up the delicious sauces.

Couscous : This is the traditional family dish for lunch on Friday. It is made up of an immense bowl of fine semolina, accompanied with vegetables and mutton, chicken or occasionally fish.

Kebab : Grilled meat.

Kefta : Chopped beef in small balls is used in tajines and on skewers.

Pastilla : Sweet and savoury Moroccan dish of succulent pigeons prepared with almonds, wrapped in puffed pastry and sprinkled with powdered sugar and cinnamon.

There is an endless variety of sweet pastries, like gazelle horns (sugar covered shortbread crescents filled with almond paste). The m'hencha is almond paste stuffed or covered with honey. The fekkas is a sweet and anise flavoured biscuit.
